All of our models do the same job, however the larger models have bigger motors and blades to do it faster. Whatever meat you drop through will be cut into slices. Turn the slices and drop through for strips. Drop the strips across the blades for cubes. Drop the cubes trough for smaller chunks.

Our blades are made from hardened carbon steel, while others we have seen use either soft stainless or some mystery metal we call Chinesium. One has what looks to be the size of our XL model, but what they don’t show is that the motor and blades for it are smaller than what we use in our Countertop model. (Imagine buying a truck and finding a motorcycle engine under the hood.) They offer no warranty or parts, since you can not contact them. Our customers enjoy the fact that we are based in the U.S. and are available by phone for support before and after their purchase and stock every part and component, should they need something years down the road.

5mm is the most popular for cutting taco meat only (3 passes- slices, strips taco meat). Those that want fajitas AND taco meat prefer 8mm blades. 2 passes for fajitas and 2 more passes gives the SAME taco meat that the 5mm does in 3.
8mm (the thickness of 6 dimes) is the most popular for fajitas. Pass once for slices, turn the slices and drop through for strips. 10mm is used by some “big plate” restaurants that want fatter fajitas, however 8mm is the standard. Cooks up quicker and the same weight looks like a larger portion to the customer.

Our blades are made of hardened carbon steel and will cut any meat (raw or cooked) that is not frozen and does not have bones.. They do not need to be sharpened and we have customers using our blades from 8 years ago. So far, customers have only replaced the same size blades if they damaged them, (Dropping on the corner of a metal table, running bone through, etc) and not from normal use.
